Lemoyne, PA – Many steps are essential to ensure Macris Chocolate’s strawberries are up to par.

First, either jumbo or long-stem strawberries must be ordered and then they have to be inspected for bruises or other imperfections.

Then, said Elena Macris, the owner of Macris Chocolates at Suite 202, 1200 Market St., Lemoyne, the strawberries have to be cleaned and dried off. If there’s a drop of water in a pot of chocolate, it starts to clump and ruins the texture, she said.
