She Finds Sweet Success Creating Honey-Filled Chocolates
St. Paul, MN – The Minneapolis-St. Paul skyline is well known for giants like the IDS Center, Capella Tower and the First National Bank building, but it has a few smaller high-rise occupants that are often overlooked — as many as 1 million honeybees.
Susan Brown, owner of boutique candy company Mademoiselle Miel, maintains 20 beehives on five Twin Cities rooftops.
Her honey-filled chocolate bonbons — Mademoiselle Miel is French for “Miss Honey” — can be found in a handful of local shops and restaurants, and she’s looking to expand her line of honey-sweetened goodies out of her new storefront on the outer edges of downtown St. Paul.
